Next time you prepare cucumber salad, try this recipe. Perhaps—just like us—you'll find that this version of the popular salad suits you best, especially in summer when a bit of refreshment is needed. An unusual addition to the cucumbers will achieve this goal.

Cucumber salad usually takes a simple form and looks almost the same in every home. It rarely differs by more than the spices (some make it sweeter, others saltier) and the possible presence—or absence—of white or red onions.

Today, however, we would like to significantly change the traditional cucumber salad ingredients by mixing things up. How? With the help of two ingredients, the salad will be lighter and perfectly fitting for a refreshing summer menu.

The first ingredient is mint. We have to admit, it's not our invention, as combining cucumbers with mint is a common practice in Turkey. The second addition to the cucumber salad is Greek yogurt, which will replace the more commonly used sour cream. The effect? Freshness, for one, and the impact on the body. Our salad has just gained new health benefits, so it's worth it!

Cucumber salad reimagined

Ingredients:

                
  • 2 green cucumbers,
  • 85 grams (3 oz) Greek yogurt,
  • 2 tablespoons 12% sour cream,
  • 1 tablespoon lemon juice,
  • a bunch of dill,
  • a few mint leaves,
  • sugar, pepper, and salt.

Preparation:

  • Peel the cucumbers and slice them. You can do this with a knife or a mandoline slicer.
  • Place the vegetables in a bowl. Add Greek yogurt, sour cream, and a bit of lemon juice. Add chopped dill and torn mint leaves.
  • Season to your liking with sugar, pepper, and salt. Mix thoroughly, and it's ready. Before eating, chill it in the fridge for a bit, as cucumber salad (especially in summer) tastes best cold. Enjoy!
