You can make breakfast rolls in the comfort of your kitchen. Despite appearances, preparing them is very simple, and the taste of homemade baked goods can be varied endlessly. One of my favourite recipes for fluffy bread requires an exciting ingredient. At first, I was puzzled, but now, these rolls are a hit in my home.

I found the recipe on YouTube on the "Rezepte von Roman" channel. The way the rolls are made there does not differ from most similar ones, but one of the main ingredients may shock you. However, the result is so spectacular that I cannot help but recommend this recipe. Be sure to try it.

How to make homemade crispy rolls?

Flour, yeast, sugar, salt, and a bit of imagination are enough to have delicious, crispy, and fluffy homemade rolls for breakfast in the morning. The simplest version, especially if you're using dry yeast that doesn't require a starter, involves mixing the ingredients, then kneading the dough, and waiting for it to rise. That's it, period.

In the version I managed to find, instead of water or milk, you use... coffee. Yes, strong, instant, or brewed coffee becomes the main ingredient here, responsible for the colour and taste of our rolls. To keep their crispiness and shine, you can brush them with beaten egg yolk before baking or very cold water during baking.

Coffee rolls for breakfast. Recipe

Ingredients:

  • 3 teaspoons of instant/ground coffee + 220 millilitres (7.5 fl oz) of boiling water,
  • 370 grams (13 oz) of wheat flour,
  • 7 grams (0.25 oz) of dry yeast,
  • 3 teaspoons of sugar,
  • half a teaspoon of salt,
  • 2.5 tablespoons of melted butter,
  • 1 egg yolk + 1 tablespoon of milk,
  • optional: coffee beans, poppy seeds, sunflower seeds, sesame seeds for sprinkling.

Preparation:

  1. Brew the coffee, then set it aside to cool.
  2. Sift 300 grams (10.5 oz) of flour into a bowl. Then add the dry yeast, sugar, and salt. Mix all the ingredients together.
  3. Create a well in the middle of the flour and pour the cooled coffee into it. Mix the ingredients.
  4. In the meantime, add the melted butter. Stir the mixture again. The dough will be thick and sticky.
  5. Next, add 70 grams (2.5 oz) of flour to the dough. Knead it vigorously (2 minutes of kneading will be enough).
  6. Then, transfer the dough to a floured surface and knead for another 5-6 minutes until it is smooth and slightly sticky.
  7. Transfer the ready dough to a bowl greased with oil. Cover the bowl with plastic wrap and a cotton cloth, then leave it to rise for 1 hour.
  8. Gently knead the dough; you can lightly sprinkle it with flour.
  9. Divide the dough into 10-12 equal parts. Form each into a ball and slightly flatten. Cover the whole with a cloth and set aside to rise.
  10. Line a baking sheet with parchment paper. Then, turn each ball bottom side up. Pinch each roll at the top, creating wrinkles along the edge like in dumplings. Then, place the rolls on the sheet with the wrinkles down.
  11. Then let the rolls rise again for 20 minutes.
  12. After that, brush them with beaten egg yolk mixed with 1 tablespoon of milk.
  13. Then cut the rolls lengthwise and sprinkle with coffee beans or other seeds.
  14. Bake the rolls in an oven preheated to 175°C (350°F) for 25 minutes.
