Grilled zucchini with cheese: A fresh twist for summer meals

Salty cheese, aromatic herbs, and my favourite this year—grilled zucchini. With just a few ingredients, I can create a delicious dish that will appear in my home many times this summer. I recommend you do the same!

For as long as I can remember, I've had trouble coming up with ideas for a healthy dinner. I wanted dishes that wouldn't burden my stomach or give me heartburn but would taste good. Eventually, I had to accept that ham and ketchup toasts don't agree with my stomach, and I had to take decisive action. The question was: what to prepare? One of the ingredients that caught my interest back then was zucchini.

My first choice was zucchini pancakes. I still like them today, although I must admit that just thinking about finding an alternative to this dish relieved me. I decided to go with the flow: I cut the zucchini into rounds, grilled it, and added a few other ingredients. Suddenly, I realized I'd created the perfect dinner and a wonderful addition to a family barbecue. I've made this dish numerous times and am relieved that my family and I have enjoyed it.

Preparation is straightforward, and the full recipe for this zucchini dish is listed below. How will you use it? As a dinner idea, a daytime snack, or perhaps a side dish for grilled pork shoulder? You'll figure something out!

Ingredients:

  • 1 zucchini,
  • 200 grams of feta cheese,
  • A handful of pine nuts (or others),
  • A bunch of parsley,
  • A bit of lemon juice,
  • Olive oil,
  • Dried rosemary,
  • Salt, pepper.

Instructions:

  • Wash the zucchini, then dry it and cut it into medium-thick slices.
  • Brush the vegetables with olive oil and season with salt, pepper, and dried rosemary.
  • Grill the zucchini prepared this way on a grill pan. Alternatively, you can use an oven: preheat to 175°C (350°F) and bake for about 20 minutes.
  • Finally, drizzle the zucchini with lemon juice and sprinkle with feta cheese, chopped parsley, and nuts. Ready to eat!
