Crazy Cow Cake - A recipe for an exceptional dessert
Heavenly! This cake is a real calorie bomb, but it's worth every bite. Combining meringue, nuts, dates, caramel, and cream creates an unforgettable taste. Both classic caramel and the chocolate-flavoured variety work wonderfully.
This cake is moist and aromatic and looks so beautiful that it's almost a shame to eat it—almost because it's impossible to refuse a piece.
Ingredients:
Sponge cake
- 3 large eggs
- 100 grams (1/2 cup) of sugar
- 2 teaspoons of vanilla sugar
- 60 grams (1/2 cup) of plain flour
- 30 grams (1/4 cup) of cocoa powder
- 1/2 teaspoon of baking powder
Soaking
- 60 millilitres (1/4 cup) of water
- 1 tablespoon of lemon juice
- 1 teaspoon of icing sugar
Cream
- 400 millilitres (1 2/3 cups) of chilled heavy cream (double cream)
- 1 cream stabilizer
- 250 grams (1 cup) of mascarpone cheese
- 210 grams (2/3 cup) of caramel from a tin
- 100 grams (2/3 cup) of chopped dates
- 100 grams (1 1/2 cups) of chopped walnuts
Meringue:
- 4 egg whites
- 200 grams (1 cup) of caster sugar
- 2 teaspoons of vanilla sugar
Method of preparation:
- Start with the sponge cake. Separate the egg whites from the yolks and whip to stiff peaks.
- While constantly mixing, add the yolks and sugar, as well as the vanilla sugar.
- Combine with the sifted dry ingredients.
- Pour the batter into a tin and bake for about 25 minutes at 350°F. Use a toothpick to check if the cake is ready.
- Set aside to cool.
- After cooling, soak with the syrup prepared from water, lemon juice, and icing sugar.
- Prepare the cream. Whip the chilled cream with the stabilizer.
- Add the mascarpone cheese and caramel, mixing until combined.
- Finally, add the chopped dates and walnuts, gently mixing with a spatula.
- Spread the cream on the cooled sponge cake and refrigerate.
- Proceed to the meringue. Whip the egg whites to stiff peaks with the sugar.
- Draw a square the size of the sponge cake on baking paper.
- Spread the mixture on the paper.
- Put the baking tray with the meringue into an oven preheated to 250°F. Bake for 15 minutes and then reduce the temperature to 230°F, baking for about 2.5 hours.
- Place the meringue on the sponge cake and chill the cake in the fridge.
