Filling weight loss soup
With the provided ingredients, you will make about 2 litres of soup with meatballs.
Ingredients
- 3 potatoes, 300 grams (approximately 300 grams) of ground turkey,
- 2 bay leaves,
- 1 tablespoon of olive oil,
- 1 onion,
- 3 cloves of garlic,
- 2 carrots,
- 1 parsley root,
- 0.5 celery root,
- 1 teaspoon of tomato purée,
- 4 sprigs of fresh thyme,
- A bunch of parsley or fresh dill.
Instructions
- Peel, wash, and dice the potatoes. Pour in 1.5 litres of water and bring to a boil. Add the 2 bay leaves.
- Shape the ground turkey into meatballs, moistening your hands with water to form well-shaped balls.
- Heat the olive oil in a pan and sauté the onion over medium heat. Add the garlic, crushed.
- Once the onion is translucent, add the vegetables, grated coarsely. Add the thyme and cover with a lid to soften the vegetables.
- Transfer the pan contents to the pot with the soup. Cook for an additional 10 minutes to enhance the flavour. Finally, add a teaspoon of purée for colour and cook a bit longer. Before serving, sprinkle with chopped parsley or dill.
