Carrot transformation: From humble root to spiced delight
Ever since I discovered this recipe, I have set aside the usual carrots and peas. Preparation takes a few moments, and the whole family will enjoy it. Korean-style carrots will delight even the pickiest eaters.

Carrots are available year-round, they are affordably priced, and both children and adults love their sweet taste. They are an invaluable ingredient in many salads, without which it's hard to imagine lunch. Try combining them with aromatic spices instead of grating them again or cooking them with peas. Your enthusiasm upon tasting it is guaranteed.
Moroccan-style carrots
When I make this salad, the smell of aromatic spices fills the house. These spices give the dish its unique character. As is typical of oriental cuisine, you can't do without garam masala, garlic, paprika, and coriander. However, if you find coriander reminiscent of soap, you can opt for our familiar Canadian parsley.
Sugar adds a delicate sweetness to the dish, which pairs well with the distinct spices. It's not overly sweet, as the garam masala and tangy citrus juice balance it out.
This is a wonderful recipe for a side dish that will delight your loved ones. It will also appeal to those who have previously associated carrots with a rabbit treat. Even the family elders will appreciate this combination.
Ingredients:
- 4 carrots,
- 2 cloves of garlic,
- sweet and hot paprika,
- half a teaspoon of garam masala,
- half a teaspoon of sugar,
- juice from 1 lemon or orange,
- chopped coriander or parsley,
- salt and pepper,
- oil.
Method of preparation:
- Peel the carrots and cut them into cubes or moderately thick slices.
- Then sauté the chopped carrots in a pan with some oil and a little water until soft.
- Add the pressed garlic, sweet and hot paprika (amount according to your taste), garam masala, sugar, citrus juice, and chopped parsley or coriander to the soft carrots.
- Season with salt and pepper to taste.
- Mix everything thoroughly and fry for a short while to combine the flavours.
Serve warm as a standalone dish or as a side to other meals. It tastes so good that it's hard to resist snacking straight from the bowl. It goes perfectly with stewed and grilled meats, vegetable patties, or a quick dinner snack. Enjoy your meal!
