It’s a year-round dessert because you can swap out the fruits depending on the season. Raspberries, strawberries, currants, blueberries, and apples or plums will work well. This cake never gets boring.

The addition of buttermilk makes the cake fluffy and soft. Furthermore, it doesn’t dry out quickly and stays fresh longer. However, it’s so tasty that it won't last long.

Ingredients:

  • 3 cups of all-purpose flour
  • 1/2 cup of sugar
  • 1.5 teaspoons of baking powder
  • 1 teaspoon of vanilla extract
  • 3 eggs
  • 1/2 cup of vegetable oil
  • 1 cup of buttermilk

Fruits: 

  • 300 grams of plums.

Crumble: 

  • 100 grams of butter
  • 100 grams of sugar
  • 150 grams of all-purpose flour

Instructions:

Step 1. Start with the crumble. Pour the flour into a bowl, add the melted butter and sugar, and knead the crumble. Refrigerate it.

Step 2. Now, proceed to the cake. Mix well with the flour, sugar, and baking powder in a large bowl.

Step 3. Beat the eggs in a separate bowl. Add the vanilla extract, vegetable oil, and buttermilk. Mix thoroughly, then pour into the bowl with the dry ingredients. Mix well.

Step 4. Transfer the resulting batter to a baking pan lined with parchment paper. Arrange quartered plums on top and sprinkle with the crumble. Put it in an oven preheated to 180°C for about 45 minutes until a toothpick comes out clean.
