Zucchini reimagined: Crispy slices with feta and honey delights
Zucchini is one of the best vegetables that can be purchased almost year-round. Its versatile taste allows you to work wonders with it, experiment, and create exceptional dishes in various forms. My discovery is breaded zucchini served in a somewhat unusual way.

Breaded zucchini has been a popular dish in many homes for many years. I decided to refresh this snack a bit and enhance its flavour with exceptional additions—salty feta cheese and honey. Pine nuts add crunchiness, and instead of the classic breadcrumbs, I opted for the thicker Japanese panko.
Breaded zucchini with feta and honey
Feta cheese and honey are well-known to fans of Greek cuisine. These two seemingly extremely different ingredients combine wonderfully—the sweetness of honey balances perfectly with the distinct flavour of the cheese. Combined with crispy zucchini slices, we get a dish worthy of a culinary Oscar.
Crispy zucchinis with honey, feta, and pine nuts are a delicious snack on busy days. I also prepare them for family gatherings and parties with friends—on every occasion, the humble vegetable steals the show.
Ingredients:
- 2 zucchinis,
- 3 eggs,
- 10 tablespoons of all-purpose flour,
- 10 tablespoons of panko breading,
- 50 grams of feta,
- honey,
- pine nuts,
- vegetable oil.
Preparation method:
Step 1: Cut off the ends of the zucchini and slice them into medium-thick slices. Place the all-purpose flour, beaten eggs, and panko breading on separate plates. Coat the zucchini slices individually, ensuring the breading adheres to the vegetable. This will make them pleasantly crunchy after frying.
Step 2: Heat a relatively thick layer of oil in a pan. Place the breaded zucchini slices and fry on both sides until they are appetizingly browned. I do this over medium heat so as not to burn the breading. After frying, I put them on a paper towel to remove excess oil.
Step 3: Lay the fried zucchini on a plate. Sprinkle with crumbled feta cheese, drizzle with honey, and add pine nuts. A tasty and simple snack is now ready. Enjoy your meal!
