Zucchini casserole – perfect for a summer dinner

Zucchini casserole is a delicious and crispy vegetable bake that impresses everyone. Perfect for a summer meatless dinner, it's easy to prepare, and its aromatic taste will draw everyone to the table. This tested zucchini casserole recipe is simple, resulting in a dish that always turns out perfectly. Discover how easy it is to prepare this delightful dish that will become a hit this summer.

Ingredients:

  • 1 zucchini,
  • 1 carrot,
  • 1 onion,
  • 120 mL water,
  • 60 g corn flour,
  • 60 g all-purpose flour,
  • 60 g grated Parmesan cheese,
  • 1 tablespoon olive oil,
  • 1 teaspoon dried rosemary,
  • 1 teaspoon granulated garlic,
  • salt, pepper.

Preparation of zucchini casserole – step by step

Zucchini casserole not only tastes delicious but is also very easy to prepare. Just a few steps, and you'll be enjoying this aromatic and crispy dish.

Step 1: First, slice the zucchini into thin slices, grate the carrot, and finely chop the onion. Transfer all the vegetables to a sieve placed over a bowl, season with salt, and mix. Set aside for 30 minutes to let the vegetables release their water.

Step 2: After 30 minutes, squeeze the vegetables thoroughly to remove the excess water and transfer them to a bowl. Do not discard the vegetable water—it will be used in the next step.

Step 3: Add corn and all-purpose flour to the water squeezed from the vegetables. Season with salt, pepper, granulated garlic, and dried rosemary. Mix all the ingredients thoroughly and then gradually add water, stirring, until a thick batter forms.

Step 4: Mix the batter thoroughly with the previously squeezed vegetables. Then, transfer the entire mixture to a baking dish, greased with olive oil. Sprinkle grated Parmesan cheese on top.

Step 5: Place the baking dish with the zucchini casserole in an oven preheated to 190°C and bake for about 40 minutes until the top is golden and crispy.
