What can be changed in the pancake recipe? It seems that all ingredients are simply indispensable. But that's not true. A blogger who doesn't eat sugar or gluten has significantly shortened the recipe. She made pancakes using only two ingredients. You have them in your kitchen.

There is no need to provide a classic recipe for pancakes. Usually, we prepare them intuitively, simply mixing flour with milk, eggs, and sometimes a bit of sugar or fat. It seems it couldn't be simpler, right? And yet it is possible.

how to prepare the healthiest pancakes?

Classic French pancakes have considerable competition. While it might seem that the recipe is simple and absolutely perfect, it does not always align with modern eating styles. Milk was the first to go. Vegans started replacing it with water or plant-based drinks. Then they searched for an egg alternative to bind the batter. It turned out that fruit purees, such as bananas or apples, can serve this role. Another key ingredient, flour, also saw modifications, with variants other than the most popular wheat flour being used. Now, it’s time to say a thorough farewell to this ingredient.

Flourless pancakes

Flour is an inseparable ingredient of traditional baked goods. However, people who avoid gluten have their ways of replacing it. Similarly, flour is not recommended in the recently popular keto diet. Hence, many alternative flourless recipes emerged. One is the pancake recipe posted on Instagram by the blogger behind the profile nieliczekalorii. Over 15,000 people have liked this recipe.

Pancakes with only two ingredients? The blogger insists they are delicious, fluffy, and very fit. What can be changed in this recipe? Instead of yogurt, add cream to the batter to suit the keto diet. For those who prefer sweeter pancakes, erythritol and a bit of vanilla essence would work well. The video shows that the pancakes are very flexible and not easy to tear. The blogger serves them with yogurt and blueberries.
