Cucumber and feta rolls
Preparing the rolls takes only a few minutes. The cucumber provides water and vitamins, while the feta cheese is a source of protein. It is fresh, light, and very tasty. If you’re not a fan of olives, you can replace them with sun-dried tomatoes, capers, smoked salmon, or chopped garden herbs.
Ingredients:
- 1 long green cucumber
- 5 ounces of feta cheese

Preparation:
- Wash the cucumber and cut it into thin slices. It’s easiest to do this with a mandoline. Don’t peel it.
- Chop the olives and mix them with the crumbled feta cheese.
