Shuh Shuh cutlets – simplicity and taste in one

Shuh Shuh cutlets are tasty pieces of chicken in an aromatic breadcrumb coating with the addition of garlic, paprika, and potato starch. Although their name's origin is unclear, there are two popular theories. One suggests that the name may come from Asian cuisine, where potato starch and seasonings such as garlic and paprika are commonly used for breading dishes. The other, more humorous theory says that these cutlets can be prepared "shuh shuh," which means very quickly. Regardless of which theory is closer to the truth, one thing is certain – their preparation takes only a few moments.

Ingredients:

  • 2 chicken breasts (about 0.6 kg),
  • 4 tablespoons potato starch,
  • 3 egg yolks,
  • 3 tablespoons oil (+ extra for frying),
  • 1/2 teaspoon granulated garlic,
  • 2 tablespoons Greek yogurt,
  • 1 teaspoon sweet paprika,
  • salt and pepper to taste.

Preparing Shuh Shuh cutlets is extremely simple. Just cut the chicken breasts into smaller pieces, mix them with the prepared breadcrumb coating, and fry in hot oil. The cutlets can be refrigerated for 30 minutes before frying, which will further enhance their taste and aroma.

The ready cutlets are best served hot to retain their crispiness. They can also be sprinkled with fresh chives or parsley for an additional flavour effect.
