Mexican crepes: a recipe for a mouth-watering dinner

Forgo the sweet fillings and challenge your palate with a savoury option. Meat, bell pepper, onion, garlic, and aromatic spices will embark you on a delightful gustatory adventure. Making savoury crepes is as easy as their sweet counterparts. Fill the cooked pancakes with this straightforward mixture, and they're ready to serve.

Ingredients:

Crepes:

  • 2 cups of all-purpose flour,
  • 2 eggs,
  • 2 cups of milk,
  • 1.5 cups of sparkling water (about 355 ml),
  • a pinch of salt,
  • a tablespoon of oil.

Filling:

  • 1 onion,
  • 1 red bell pepper,
  • 2 cloves of garlic,
  • 7 oz (about 200 grams) of ground beef,
  • 1 teaspoon of hot paprika,
  • 1 teaspoon of ground cumin,
  • 1 teaspoon of sweet paprika,
  • 1 teaspoon of salt,
  • 1 teaspoon of pepper,
  • a tablespoon of oil,
  • 9 oz (about 255 grams) of shredded cheese.

How to prepare:

  1. Begin with the crepes. Combine all the crepe ingredients in a bowl and mix well to prevent lumps. If you have a preferred recipe, feel free to use it instead. Just make sure not to add any sugar to the mix.
  2. Allow the batter to rest for 20 minutes.
  3. Cook the crepes in a heated pan until golden.
  4. Proceed with the filling. Warm the oil in a pan. Add the chopped onion, diced bell pepper, and minced garlic. Sauté briefly until they soften.
  5. Add the meat and cook until it’s thoroughly browned.
  6. Stir in all the spices and blend well.
  7. Spread a portion of the filling on each crepe, sprinkle with cheese, and roll it up.
  8. You can then pan-fry them until the cheese melts inside. For another option, drape it with tomato sauce, top it with more cheese, and bake it in an oven.
