Recipe for perfect croquette pancakes

Ingredients:

  • 1 cup of all-purpose flour,
  • 1 cup of milk,
  • 175 mL of sparkling water,
  • 2 large eggs,
  • 3 tablespoons of melted butter,
  • a pinch of salt.

Instructions:

  1. Melt the butter and let it cool.
  2. Sift the flour into a bowl, add salt, and crack the eggs. Pour the water and milk, then blend everything into a smooth batter.
  3. Let the batter rest for 15 minutes. This step is crucial because it allows the gluten in the flour to combine with all the ingredients, making the batter more elastic.
  4. After 15 minutes, add the melted (but not hot) butter to the batter and mix again.
  5. Heat the pan and grease it with butter or oil.
