How to cook cauliflower properly

Selecting the perfect cauliflower begins with its appearance. Opt for ones free of brown spots and with crisp, green leaves, as these signs indicate freshness.

The initial step involves cutting the cauliflower into florets, facilitating faster cooking.

Next, fill a pot with water, season with about 2 teaspoons of salt, and consider adding a pinch of baking soda to keep the cauliflower bright white throughout cooking. Upon reaching a boil, submerge the florets. After approximately 12 minutes, they should be perfectly tender and ready to enjoy.

A simple trick to eliminate cauliflower's cooking smell

While cauliflower's flavour is beloved by many, its cooking aroma—stemming from sulphur compounds—can be less appealing. A straightforward solution is to add the juice of one lemon to the boiling water. This not only dispels the odour but can also enhance the taste of the cauliflower.
