  • 250 grams (9 oz) of millet,
  • 4 apples – preferably sour, e.g., Grey Renette,
  • 1 teaspoon of cinnamon,
  • 1 tablespoon of honey,
  • 2 eggs,
  • 250 millilitres (8.5 fl oz) of plant-based oat milk,
  • 1 teaspoon of baking powder,
  • 1 teaspoon of vanilla extract,
  • 20 grams (0.7 oz) of raisins,
  • a pinch of salt.

Preparation:

  1. Rinse the millet under running water, then cook in 500 millilitres (2 cups) of water with a pinch of salt for about 15 minutes until soft and all the water is absorbed. Set aside to cool.
  2. Wash, peel, and slice the apples thinly or grate them on a coarse grater. Mix with cinnamon and honey (or maple syrup). You can also add a handful of raisins to add natural sweetness to the pie.
  3. In a large bowl, mix the cooled millet with eggs, plant-based milk, baking powder, and vanilla extract. Stir until a uniform consistency is achieved.
  4. Line a baking pan (approx. 24 cm in diameter) with parchment paper or grease with coconut oil. Pour half of the millet mixture into the bottom of the pan, spreading it evenly. Place the apple layer on top, then cover with the remaining millet mixture.
  5. Bake in an oven preheated to 175°C (350°F) for about 40-45 minutes until the top is lightly golden and crispy.
