Recipe for millet apple pie without sugar and flour

Ingredients:
- 250 grams (9 oz) of millet,
- 4 apples – preferably sour, e.g., Grey Renette,
- 1 teaspoon of cinnamon,
- 1 tablespoon of honey,
- 2 eggs,
- 250 millilitres (8.5 fl oz) of plant-based oat milk,
- 1 teaspoon of baking powder,
- 1 teaspoon of vanilla extract,
- 20 grams (0.7 oz) of raisins,
- a pinch of salt.
Preparation:
- Rinse the millet under running water, then cook in 500 millilitres (2 cups) of water with a pinch of salt for about 15 minutes until soft and all the water is absorbed. Set aside to cool.
- Wash, peel, and slice the apples thinly or grate them on a coarse grater. Mix with cinnamon and honey (or maple syrup). You can also add a handful of raisins to add natural sweetness to the pie.
- In a large bowl, mix the cooled millet with eggs, plant-based milk, baking powder, and vanilla extract. Stir until a uniform consistency is achieved.
