Baking bread is often associated with something that requires a large amount of time and patience. Many people also think it demands significant skill and a good starter. However, the world of baking hides many tasty recipes that even an amateur can handle. One of them is a simple bread without flour, yeast, and starter. Its base is yogurt and seeds. It’s perfect for when you've run out of bread at home and don’t have the time or desire to rush to the bakery.
Quick bread without starter and yeast
This is the simplest homemade bread recipe I know. Combine natural yogurt with oats, your favourite seeds, a little honey, and baking soda. It’s perfect as a base for classic sandwiches or as a soup side. Most importantly, you don’t have to wait for it to rise—start baking right away.
Each bite is packed with flavour because the base is a variety of seeds and nuts. You can customize the mix of ingredients and proportions according to your preferences. It’s healthy, quick, and truly delicious. Oats, seeds, and nuts provide the body with fibre, vitamins, minerals, and healthy fats. Natural yogurt is a source of protein and probiotics that benefit the digestive system. When I take this bread out of the oven, everyone waits impatiently for it to cool down.
You can use either natural or Greek yogurt. Greek yogurt will give the bread a denser consistency. Bake the bread in a loaf pan about 20x9 centimetres in size.
Ingredients:
- 500 grams natural yogurt
- 300 grams oats
- 1 cup mixed seeds and nuts (e.g., pumpkin, sunflower, walnuts, chia, flax)
- 1 teaspoon honey
- 1/2 teaspoon salt
- 1 teaspoon baking soda
Preparation:
- In a large bowl, combine yogurt, oats, seeds and nuts mix, honey, salt, and baking soda. Mix thoroughly until all ingredients are combined.
- Transfer the mixture to a loaf pan lined with parchment paper. Smooth the surface, pressing gently.
- Bake in a oven at 170°C (Eastern Time) for about 50 minutes.
After baking, remove the bread from the pan and let it cool on a rack. Then slice and serve. Enjoy!
