When the abundance of fruit weighed down the trees, summer lunches were enriched with delicious cherries picked from Grandma home garden. She would balance the slightly tart fruits with a hefty dose of sugar—back then, no one thought about properly balancing meals or limiting sugar in the diet. Today, I happily return to this recipe and serve pasta with cherries to my family.
Grandma pasta with cherries
When Grandma called us for lunch, all the kids from the neighbourhood would come running. A hearty serving of pasta with sweet, fruity sauce provided energy and strength for play. However, strawberries are much more popular as an addition; in my home, cherries reign supreme.
Sometimes, the pasta was simply covered with a sauce made from smoothly blended (previously pitted) cherries. Occasionally, Grandma would add fruit pieces or cottage cheese, adding protein and making the dish more filling. Pasta with cherries was the summer lunch king. Preparing it is simple and quick, so you don't have to spend much time in the kitchen on hot days.
Ingredients:
- 100 grams pasta (e.g., fusilli, farfalle, penne),
- 4 tablespoons cream,
- 50 grams pitted cherries,
- 1 tablespoon sugar,
- a pinch of salt.
Preparation:
- Cook the pasta in salted water according to the package instructions. You can choose any shape.
- Blend the pitted cherries with the cream and sugar. Both fresh and frozen fruits, as well as cherries from compote, will work here.
- Pour the cherry sauce over the cooked pasta.
Transfer the pasta with cherries to a plate. Decorate the dish with fruit pieces and sprinkle with crumbled cottage cheese. Enjoy!
