Cucumber cold soup with feta – recipe

This cucumber cold soup owes its unique taste to the addition of feta cheese. Its salty flavour makes the whole dish more distinctive. How to prepare this hit soup for the heat?

Ingredients:

  • 3 large cucumbers
  • spring onion
  • two cloves of garlic
  • ¼ package of feta cheese
  • 1 litre of buttermilk
  • a pinch of pepper

Preparation:

Wash the cucumbers, peel them, remove the seeds, and cut them into small pieces. Peel and chop the onion and garlic. Put all these ingredients in a blender, pour in cold buttermilk, and blend until you get a smooth consistency. You can blend the feta with the rest, cut it into small pieces, and add to the soup. Season to taste. You can garnish it with mint leaves or pistachios. The cold soup is ready to eat, although leaving it in the fridge for an hour is best to cool down and allow the flavours to meld.
