All you need is cottage cheese and a few basic ingredients to create something tasty quickly. They disappear from the plate in no time, as there's never a shortage of eager eaters.
Cottage Cheese Pancakes
A little mixing and some frying, and they're ready—you can start eating. The addition of cottage cheese gives the pancakes a unique fluffiness, delicacy, and a slightly tangy taste. Moreover, cottage cheese is rich in protein, essential for muscle building and tissue regeneration. Adding it to the pancakes increases the nutritional value of our breakfast or snack.
Ingredients:
- Approximately 300 grams (about 1 1/3 cups) of cottage cheese,
- 2 eggs (separate whites and yolks),
- 6 tablespoons of wheat flour,
- 2 tablespoons of sugar,
- 1 packet of vanilla sugar,
- Oil or clarified butter for frying.
Instructions:
Step 1. Separate the egg whites from the yolks. Place the cottage cheese in a bowl. Choose a natural variety without any additives. Add the yolks, white sugar, vanilla sugar, and wheat flour, and mix thoroughly.
Step 2. Beat the egg whites until stiff peaks form, and add them to the yolk mixture. Gently mix with a spatula or spoon to maintain the fluffiness. This will make the pancakes soft and delicate.
Step 3. Heat oil in a pan. Once hot, spoon portions of the mixture onto it. Fry the pancakes for about 2-3 minutes on each side. You can fry them in vegetable oil or clarified butter. If you have a non-stick surface, you can fry without oil. In that case, add a tablespoon of oil to the batter.
Step 4. Serve the finished pancakes with your favourite toppings. You can sprinkle them with powdered sugar, jam, fresh fruits, or chocolate cream. They are perfect for breakfast, an afternoon snack, or a work treat because you can enjoy both hot and cold. Enjoy!
