Elevate your brunch with Indonesian-inspired noodle pancakes

Pancakes are always a great snack choice. They are easy to prepare and come in various varieties. Adding a few substantial ingredients can transform them into a complete lunch dish. This time, I'm making party pancakes from rice noodles in the style of Indonesian Martabak pancakes. I'll serve them with homemade sweet and sour sauce. It's going to be a hit.

Martabak pancakes can be prepared with various noodles, but they taste best when made with thin strands. These could be wheat noodles like the ones typically served with chicken soup. However, they become far more interesting when made with soy or rice noodles, giving them an oriental flair and making them lighter and crunchier.

Noodle pancakes – two frying options

You can form small or large pancakes from the batter and cut them into four parts. For small ones, spoon the batter onto a skillet with heated oil. For large pancakes, cook them like classic crêpes, spreading a larger portion of batter over the entire skillet. Martabak pancakes can also be baked in the oven, making them less caloric and crispy.

Homemade sweet and sour sauce

I like sweet and sour sauce. Unfortunately, store-bought versions often lack good-quality ingredients. Therefore, if I'm in the mood for an authentic Asian feast or want to surprise friends with something special, I make a homemade version of this sauce.

In a skillet, I sauté vegetables cut into very thin strips. I add pieces of real pineapple, tomato purée, and date syrup. Rice noodle pancakes dipped in this sauce are an extraordinary culinary delight.

Recipe for rice noodle pancakes

Add finely chopped chilli pepper to the pancake batter if you enjoy spicier flavours.

Ingredients:

  • 100 grams of cooked rice noodles,
  • 1 green onion,
  • 1 egg,
  • 50 grams of grated yellow cheese,
  • Salt and pepper to taste,
  • Oil for frying.

Instructions:

  1. Finely chop the green onion along with the chives.
  2. Mix them with the egg, salt, and pepper.
  3. Add the cooked and cooled noodles. If the strands are long, you may want to cut them with a knife beforehand to make it easier to form smaller pancakes.
  4. Add the grated yellow cheese.
  5. Mix everything and fry in a skillet with heated oil until golden on both sides.
