Coconut-crusted chicken strips with tangy pineapple dip
Crispy chicken bites are a dish that always disappears from the table first. In this recipe, the chicken pieces are coated in coconut flakes, and instead of the classic dip, we have something entirely different.

Golden-brown and crispy on the outside, tender and juicy inside, these chicken strips steal the show at any gathering. Coconut flakes provide a fantastic alternative to the classic breadcrumb coating. Accompanying the strips on the plate is a delectable pineapple dip with honey and chilli flakes. Prepare to be pleasantly surprised by the unique taste and create strips like never before.
Pineapple Dip
Nuggets and strips need the perfect accompaniment. While numerous ideas exist for dips, a pineapple sauce complements coconut bites beautifully. The base is, naturally, pineapple and mayonnaise, with the sweet flavour further enhanced by a touch of honey. To balance the sweetness, chilli flakes add a spicy note.
Coconut chicken strips
These are perfect for a warm dinner; when served at a party, they quickly vanish. The coconut flake coating offers a delightful alternative to breadcrumbs, panko or cornflakes.
Ingredients:
- 1 chicken breast fillet,
- 1 teaspoon curry,
- 1 teaspoon salt,
- 1/3 teaspoon pepper,
- 2 eggs,
- 2 tablespoons of all-purpose flour,
- 140 grams (about 1 1/2 cups) of coconut flakes.
Pineapple Dip:
- 170 grams (about 1 cup) of pineapple,
- 2 tablespoons of honey,
- 1 teaspoon chilli flakes,
- Juice of 1/2 a lemon.
Preparation:
Step 1. Cut the chicken breast into strips. Place them in a bowl, add curry, salt, and pepper, and mix well until the spices evenly coat the meat.
Step 2. Prepare the sauce. Blend the pineapple pieces with mayonnaise, honey, chili flakes, lemon juice, and a pinch of salt in a small bowl.
Step 3. Crack the eggs into a bowl and mix them with the flour. Place the coconut flakes in a separate bowl. Dip the chicken pieces in the egg mixture first, then thoroughly coat them in the coconut flakes.
Step 4. Fry the prepared chicken bites in deep, hot oil until golden. After frying, place them on a paper towel to remove any excess oil. Alternatively, you can bake them in an air fryer.
Step 5. Serve the crispy chicken pieces coated in coconut with the prepared pineapple sauce. Enjoy!
