The beautiful, tasty, and colourful Valentine's healthy cheesecake is the ideal dessert for lovers. Its delicate texture and sweet taste will brighten up a romantic evening for two. However, there's nothing stopping you from making it for a regular, healthy snack—love should be celebrated all year round.
This cheesecake is light and healthy, so you can enjoy it without guilt. The decoration with heart-shaped marshmallows and fresh strawberries adds charm and highlights its Valentine's theme. It's a great way to express your feelings and surprise your loved one with a special dessert.
Although the cheesecakes are quick to prepare, they need proper cooling. Start preparing them the day before you plan to serve the snack.
Ingredients:
- 250grams of low-fat cottage cheese,
- 1 sugar-free strawberry jelly package,
- 150 grams of strawberries,
- 9 mini sponge cakes,
- heart-shaped marshmallows for decoration.
Instructions:
Step 1. Dissolve half the jelly in approximately 200 millilitres of hot water and set it aside to cool.
Step 2. Remove the stems from the strawberries and cut them into cubes. Transfer them to dessert cups, pour over the jelly, and place in the fridge for 3 hours to set.
Step 3. Dissolve the remaining jelly in roughly 200 millilitres of hot water. Once it cools, add the crumbled cottage cheese and blend into a smooth mass.
Step 4. Add the sponge cakes to the dessert cups. Spread the prepared cottage cheese mixture and refrigerate overnight. The next day, decorate with marshmallow hearts and strawberries. Enjoy!
