Angel Eyes are a simple yet impressive recipe for holiday cookies that both children and adults will adore. The key to their unique flavour is a sweet touch—preserves or jam. You can choose any flavour, from classic plum to exotic passion fruit. Jelly also works well here. It's this colourful centre, reminiscent of multicoloured eyes, that gives them such a charming name. A crumbly cookie combined with a juicy filling is the ideal combination, perfect as a sweet addition to coffee or tea.

Many people associate them with childhood and holidays when the whole family would gather around the table to prepare these sweet treats together. The smell of freshly baked cookies would spread throughout the house, creating a unique atmosphere.

A sweet heart of preserves, jam, or jelly on a crumbly pastry is a combination that's hard to resist. It's this sweet touch, reminiscent of sparkling eyes, that gives them such a magical name. Perfect for the holiday table, but also for any other occasion.

Ingredients:

  • 1 cup all-purpose flour,
  • 2/3 cup butter,
  • 5 tablespoons sugar,
  • 2 egg yolks,
  • 1 packet of vanilla sugar,
  • 100 grams of ground hazelnuts,
  • 1 strawberry jelly packet,
  • 1 cup boiling water.

Instructions:

Step 1. Pour the jelly into a bowl, add boiling water, and mix. Set aside to cool in a zip-lock bag.

Step 2. Mix the all-purpose flour with ground hazelnuts, soft butter, egg yolks, sugar, and vanilla sugar into a uniform mass. Wrap in plastic wrap and refrigerate for an hour.

Step 3. Take pieces of the dough, form small balls, and place them on a baking sheet lined with parchment paper. Flatten and make an indentation in the centre with your finger. Place in an oven preheated to 180 degrees Celsius for 15 minutes.

Step 4. When the baked cookies have cooled, fill the indentation with jelly. Snip the corner of the zip-lock bag—it will create something like a piping bag. Enjoy!
