A vegetable sandwich spread guarantees a delicious breakfast. Try this recipe if you're bored with regular sandwiches and tired of egg spread. After a meal like this, not even crumbs will be left.

Vegetable salad is a staple during the holidays for many Canadians. We eat it by the kilogram and then forget about it for many months. This time, it returns not as an ordinary salad, but as a delicious spread for sandwiches. Combined with a slice of fresh bread, it tastes simply amazing.

The ingredients are simple and won't surprise anyone - mainly eggs and vegetables. To make things easier, choose a ready-made mix, for example, in a jar. This will make creating the spread for sandwiches very easy and very quick. It's also a good way to sneak an extra serving of vegetables into your diet. The sandwich spread is lighter than the classic salad - there is no mayonnaise here, and cottage cheese serves as the binder. This makes it healthy, tasty, and nutritious.

It goes perfectly with fresh rolls or bread. You can spread it on toast, although I know fans of this delicacy who can't resist eating it straight from the bowl. When I take sandwiches with vegetable spread to work, all my coworkers are envious. The recipe quickly gained recognition and even ousted the much more popular egg spread or even cottage cheese with radish.

Ingredients:


  • 3 hard-boiled eggs,
  • 300 grams of vegetable mix,
  • 225 grams of cottage cheese,
  • ⅓ teaspoon pepper,
  • 1 teaspoon salt.

Preparation Method:

Step 1: Grate the hard-boiled eggs on a coarse grater.

Step 2: On a large plate or in a bowl, transfer the vegetable mix. Add the drained cottage cheese and the previously grated eggs. Season with salt and pepper.

Step 3: Next, take a potato masher and mash the mixture into a paste. The consistency should be quite smooth but not uniform, so a masher or fork will work much better than a blender.

Step 4: Cut the bread into slices, preferably not too thin. Spread the prepared vegetable spread on the slices. You can additionally sprinkle the sandwich with a green accent such as parsley or chives. Enjoy your meal!
