Waffle strawberry cake: A delightful no‑bake dessert recipe

It’s hard to imagine birthdays, name days, or other family gatherings without a delicious cake. Usually, these consist of multiple sponge cake layers separated by various creams, topped with traditional chocolate glaze. There’s nothing wrong with such a cake, but sometimes it’s worth going wild and opting for a completely different solution.

Waffle cake — recipe
When I made this for the first time, everyone was speechless and amazed. Since then, they don’t want to hear about any other cake.
Ingredients:
Waffle batter (about 8 pieces):
- 300 grams of wheat flour,
- 1.5 teaspoons of baking powder,
- 4 tablespoons of sugar,
- 1 packet of vanilla sugar,
- 400 milliliters of milk,
- 2 eggs,
- 125 milliliters of vegetable oil.
Strawberry Cream:
- 500 milliliters of 30% heavy cream,
- 350 grams of mascarpone,
- 2 tablespoons of powdered sugar,
- 300 grams of chopped strawberries.
Decoration:
- 50 milliliters of 30% heavy cream,
- strawberries,
- a mint leaf for decoration.
Preparation method:
Step 1. I start the recipe by preparing the waffle batter. I combine flour, milk, eggs, sugar, vanilla sugar, baking powder, and oil for this.
Step 2. I pour the ready batter into the preheated waffle iron and bake until the waffles are golden brown.
Step 3. Next, I prepare the strawberry cream. To make it, I first whip the well-chilled cream with powdered sugar. After a moment, I also add the mascarpone. Finally, I add the washed and chopped strawberries.
Step 4. On a plate, I placed four waffles close together to form a large square. Using a round cutter, I cut out a perfect circle, creating the cake base.
Step 5. Without removing the cutter, I spread the strawberry cream directly on the waffle base. Finally, I cover the cream with another layer of crispy waffles.
Step 6. This certainly isn’t the end, as there’s still the decoration of the cold cake. I use whipped cream, fresh strawberries, and mint leaves for this.
Step 7. I put the finished cake in the refrigerator for 2 hours, then cut it into smaller pieces and served it to guests. And that’s it—enjoy!
