Savour summer with a strawberry and cream pancake roll
Pancakes don't need much introduction as they have been known in cuisine for generations. Sometimes, it's worth experimenting and serving this popular dish in a slightly different form.

A pancake roll is a great dessert idea that can substitute for many cakes. Inside the pink pancakes is a well-known and loved combination—strawberries and whipped cream. This dessert is the quintessence of summer in a simple and delicious version.
Strawberry pancake roll with whipped cream
This dessert is full of sweet summer indulgence. In my home, it replaces cake and plays the leading role in the family afternoon tea. The pink colour of the pancakes is due to food colouring. You can skip this step if you don't have it at home. However, it's sometimes worth colouring your day a little.
When the strawberry season ends, I substitute with some raspberries or currants. This combination is worth the sweet indulgence. It's simple and delicious - a great alternative to classic pancakes.
Ingredients:
Pancake batter:
- 2 eggs
- 4 tablespoons of sugar
- 1 packet of vanilla sugar
- 1 cup of all-purpose flour
- 375 millilitres of milk
- pink food colouring
Extras:
- 1 package of whipped cream powder
- 200 millilitres of cold milk
- strawberries
Preparation method:
Step 1. Put the all-purpose flour into a bowl, add regular sugar and vanilla sugar, pour in the milk, and start mixing, adding eggs and food colouring in the meantime. Fry the pancakes in a heated pan.
Step 2. Whip the whipped cream powder with cold milk. You can also use heavy cream and powdered sugar, strengthening its consistency with whipping cream stabilizer.
Step 3. Arrange the pancakes so that their edges overlap each other. Spread the whipped cream and add chopped strawberries. Roll it up.
Step 4. Decorate the finished roll with whipped cream and strawberries. Enjoy!
