Chicken meatballs with dried tomatoes are one of my favourite dinners. While you can serve them with potatoes or rice, in my house, we all prefer perfectly creamy purée. The meatballs are easy and quick to prepare, even if you're short on time. They are so tasty that everyone goes for seconds, and when someone tries them for the first time, they immediately ask for the recipe.
Chicken meatballs in cream sauce with purée
Although this dish is simple, it could easily find a spot on many restaurant menus and quickly become a hit. It is perfect for both younger and older family members. The addition of dried tomatoes enhances the flavour, making the meatballs anything but boring.
The iconic Ikea meatballs may be forgotten. This recipe definitely surpasses them.
Ingredients:
- 1.3 lbs turkey or chicken breast,
- 1 wheat roll,
- ¾ cup milk,
- ⅓ cup chopped parsley,
- ½ onion,
- 2.8 oz dried tomatoes in oil,
- 2 egg yolks,
- 2 cloves garlic,
- ⅓ cup wheat flour,
- 1.5 tsp salt,
- ½ tsp pepper,
- 17 fl oz broth,
- 5.3 oz cream cheese.
Instructions:
Step 1. Soak the roll in milk. Grind the meat with the soaked roll in a grinder, or purchase pre-ground meat.
Step 2. Add the chopped parsley, chopped dried tomatoes, minced onion, egg yolks, and pressed garlic. Season with salt and pepper, and mix the mass well.
Step 3. Form small balls with damp hands from the mass. Roll them in flour.
Step 4. Brown the meatballs on each side in hot oil. Then pour in the broth and simmer covered.
Step 5. After a few minutes of simmering, remove the meatballs and set them aside. Add the cream cheese to the broth and mix thoroughly. Return the meatballs and cook until the sauce thickens slightly.
Step 6. Mash the boiled potatoes. Add butter and milk and mix thoroughly to create a smooth purée.
Step 7. Place the potatoes on a plate. Add the meatballs with the sauce and garnish the dish with chopped parsley. Enjoy!
