Making kefir pancakes is a simple and enjoyable activity that can become a family tradition. Apple yeast pancakes with kefir are delicious and evoke childhood memories and a homely atmosphere. I hope this recipe becomes your favourite, too, and you use it often. You will achieve results as good as mine if you remember that all ingredients should be at room temperature. Take them out of the fridge before cooking, which is crucial for achieving the ideal consistency.

Apple pancakes with kefir: Recipe

Unlike traditional yeast pancakes, these are delicious even after cooling, though they're best served hot. To prepare these tasty apple pancakes with kefir, you will need:

  • 400 mL of kefir,
  • 300 g of wheat flour,
  • 2 medium apples,
  • 1 teaspoon of baking powder,
  • 2 medium eggs,
  • a pinch of salt,
  • powdered sugar for serving (optional),
  • canola oil for frying.

Preparation:

  1. Peel the apples, remove the cores, and cut them into small cubes. Add them to the batter and mix well.
  2. Cover the batter with a cloth and let it rest for 15 minutes.
  3. During this time, prepare the necessary accessories like a frying pan and oil.
  4. Heat the oil in a pan over medium heat. Spoon the batter to form small pancakes, frying them on both sides until golden brown.
  5. Avoid frying on too high a heat to prevent burning them on the outside while keeping them raw inside.
  6. Once the pancakes are ready, drain them on paper towels to remove excess oil.

Kefir pancakes with apples

The freshly made kefir pancakes are best served warm, right after frying. You can sprinkle them with powdered sugar for extra sweetness.
