Preparing meringue cake may take some time, but the final result will definitely reward the effort. Below you'll find a detailed recipe that will guide you step-by-step through the entire process.
- Crumbly pastry: Knead the dough with the given ingredients and chill it in the refrigerator. Then shape the dough into a log and divide it into 6 equal parts. Roll two of them thinly to the size of the baking pan. Place back in the refrigerator.
- Meringue layer: Beat the egg whites until stiff with a pinch of salt, then gradually add sugar and gelatin mixes.
- Custard cream: Cook the puddings in 750 millilitres of milk and set aside to cool. Then whip the butter until fluffy and gradually add cooled pudding in small portions. When the cream becomes fluffy, you can stop mixing.
- Baking the cake: Remove two layers of dough from the refrigerator. Spread 1/3 of the meringue mixture on one layer and lay some drained cherries from the compote. Finally, cover it with the second layer and bake at 180°C for about 25 minutes.
- Repeat the same process with the remaining cake layers.
- Once cooled, layer them with custard cream, and you can sprinkle the top with powdered sugar or drizzle it with chocolate glaze.
