Crumbly alfajores cookies
Alfajores consist of two round, slightly sweet crumbly cookies. Between the cookies is a sweet filling, most often made with dulce de leche. Add a light sprinkle of coconut flakes, and you can enjoy the crunch.
There is no shortage of people willing to eat them. Fortunately, this is a simple recipe for cookies, so even someone who usually avoids the oven can bake them. Make alfajores - the recipe is simpler than you might think.
Ingredients:
- 200 grams all-purpose flour,
- 300 grams potato starch,
- 200 grams butter,
- 2 teaspoons baking powder,
- 3 egg yolks,
- 115 grams sugar,
- 1 teaspoon vanilla extract.
Other ingredients:
- 200 grams dulce de leche,
- 1/2 cup coconut flakes.
Instructions:
Step 1. Cream the butter with sugar until fluffy and light. Add the egg yolks and vanilla extract, and mix.
Step 2. Then, add the potato starch, all-purpose flour, and baking powder. Knead the dough until uniform, wrap it in plastic wrap, and refrigerate for 2 hours.
Step 3. Divide the dough into two parts. Roll them out and cut out circles. Place them on a baking sheet lined with parchment paper and put them in the oven preheated to 175 degrees Celsius for 10 minutes. Do the same with the remaining dough.
Step 4. Spread one cookie with dulce de leche and cover with another cookie. Roll the edges in coconut flakes. Alfajores are ready to be crunched. Enjoy!
