Pancakes are a simple dish you can prepare even without a recipe. All you need are grated vegetables, flour, and an egg. So, what vegetables can you use?

The most popular pancakes are potatoes, but those made with zucchini are well-loved. However, most vegetables can be used for pancakes, and we often forget about that. Mixes also work great. Are you a little bored of zucchini pancakes? Add grated broccoli to them. It won’t be a completely different dish, but the taste will change.
You most often reach for broccoli when preparing salads or soup; in these cases, you must cook them. We usually forget that these vegetables can be eaten raw. Of course, this is uncommon, as broccoli tastes much better when briefly cooked. However, for pancakes, this isn't necessary. The vegetable must be finely chopped or grated with a coarse grater. A grater is handy for grating the broccoli stem. You can use the entire vegetable for pancakes without waste, making it eco-friendly.
Main course – green vegetable pancakes
What is critical in preparing pancakes? Although you have a lot of freedom in choosing ingredients, you must ensure the right consistency. The mixture should be pretty thick. Season it appropriately, and use fresh herbs. The pancakes can even be a main dish, served with a portion of lettuce, arugula, yogurt, and salmon slices. They also work well as a side dish to delicate meat sauces.
Recipe for mixed vegetable pancakes
Ingredients:
- medium-sized zucchini,
- 1 small broccoli,
- 1 onion,
- 2 cloves of garlic,
- 2 eggs,
- 125 mL of flour,
- salt and pepper to taste,
- a few sprigs of dill, parsley, or basil,
- oil for frying.
Preparation method:
- Wash the zucchini and grate it on a coarse grater. Sprinkle it with salt, transfer it to a sieve, and let it sit for 10 minutes. Then, squeeze out the excess liquid.
- Rinse the broccoli and divide it into small florets. Finely chop them, and grate the stem on a coarse grater. You can also grate the entire vegetable.
- Peel the onion and chop it into small cubes. Peel the garlic and press it through a garlic press.
- Mix the chopped vegetables. Add the eggs, flour, and finely chopped herbs. Season the mixture to taste and mix it well.
- Heat some oil in a pan. Place portions of the vegetable mixture with a spoon and form pancakes. Fry them over medium heat until they are golden brown on both sides.
