This is one of my favourite autumn specialties. I prepare the pink paste in advance, and the result is beyond expectations. It's a great way to serve ordinary sandwiches extraordinarily.

Beets are incredibly healthy, but we're often unaware of their full culinary potential. Perhaps we don't choose beets more frequently, typically considering them only when making borscht. Beets are remarkable because they retain their beneficial properties even after heat processing, making them perfect for baking or cooking in various ways. One such way is to bake these colourful bulbs and prepare a delicious and healthy sandwich spread (not just for sandwiches).

Roasted beet spread - how to use it in the kitchen?

The roasted beet spread is delightful—just spread it on crispy, toasted bread. It's also a wonderful addition to hard-boiled or fried eggs, cold cuts, and bread. The pink beet spread works perfectly as a component of egg paste—mix it with chopped eggs, mayonnaise, and horseradish for a colourful and tasty sandwich.

The roasted beet spread is an excellent ingredient for vegetable tortillas (and more). It's also worth pairing with yogurt and smoked fish (with a hint of mustard) to create a healthy snack with bread or vegetable sticks. Additionally, roasted beet spread has some similarities with... pesto. Adding more sunflower seeds and some feta or ricotta will craft a divine addition to pasta.

Roasted beet spread. Recipe

Ingredients:

  • 3 medium-sized beets,
  • 1 large head of garlic,
  • half a cup of shelled sunflower seeds,
  • 1 tablespoon lemon juice,
  • 4-5 tablespoons olive oil,
  • 2 tablespoons chopped dill,
  • salt and pepper to taste.

Preparation:

  1. Preheat the oven to 200°C.
  2. Scrub the beets thoroughly, but do not peel them, then wrap them tightly in aluminum foil.
  3. Wrap the unpeeled head of garlic in aluminum foil as well.
  4. Place the prepared vegetables on a baking sheet and put them in the oven. Remove the garlic after about 30 minutes and the beets after about 60 minutes (check earlier with a toothpick to ensure they're soft).
  5. Toast the sunflower seeds in a dry pan until golden, then set aside to cool.
  6. Peel and cut the roasted beets. Add the roasted garlic, toasted sunflower seeds, olive oil, lemon juice, chopped dill, salt, and pepper.
  7. Blend everything into a smooth, thick paste. Adjust seasoning to taste, if necessary.
