Delicious manor croquettes: A savoury twist on a classic favorite
It's always time for delicious croquettes, so there's no need to limit them to the holidays. Since they can be made quickly, they are perfect for busy, work-filled days. You just need to fry some pancakes and use leftover meat from the previous day for the filling. Manor croquettes are a dish that the whole family will love.

There will be time for croquettes with cabbage and mushrooms later, as the mushroom picking season is just getting started. However, this doesn't mean you have to wait to enjoy savoury pancakes; a delicious filling with meat and vegetables works just as well. Especially when you can use leftover meat from dinner. This way, nothing goes to waste, and everyone gets to enjoy delicious croquettes.
Manor croquettes
They are crispy and delicious, and making them is a piece of cake. They differ from classic meat croquettes in that the filling can also include zucchini or onion. You can use meat left over from the previous day's dinner, such as a piece of roasted fillet or pork shoulder.
To further enhance the flavour of the filling, you can add grated cheddar cheese or a handful of chopped herbs. Red bell pepper also works well—this recipe is a bit like cleaning out the fridge of leftover vegetables.
When making pancakes, remember not to add sugar to the batter. You can fry more pancakes at once and use some for croquettes while serving the rest as a sweet dish.
Ingredients:
- 6 pancakes
- additional pancake batter for coating
- 1 cup of breadcrumbs
Filling
- cooked, roasted, or grilled meat
- 1 onion
- 1 clove of garlic
- 1 small zucchini
- 1 tablespoon of butter
- salt and pepper to taste
- seasonings: sweet and hot paprika, nutmeg, oregano
Additionally:
- oil for frying
- garlic sauce for serving
Preparation method:
- Chop or grind the meat.
- Dice the onion and zucchini; peel the garlic and press it through a garlic press.
- Heat the oil in a pan and sauté the vegetables along with the meat.
- Season with salt, pepper, and spices. Adjust the amount according to your preference.
- Place a portion of the prepared filling on each pancake and roll it up into a croquette.
- Dip in pancake batter, then coat thoroughly in breadcrumbs.
- Fry in a pan with hot oil until the croquettes are golden brown.
After frying, place on paper towels to remove excess oil. Transfer to plates and drizzle with garlic sauce. Enjoy!
