In summer, you can enjoy desserts daily because they are fruit-based and made with dairy products. Nutritionists might not agree with that statement, but the no-bake cheesecake from the chef's recipe is relatively light. Moreover, you can limit yourself to one portion, as it’s served in a glass.
Dessert but healthy
The ingredient list for this dessert is short. It is based on homogenized cheese, which is considered a diet food. It doesn’t have too many calories but is rich in nutrients. The ingredients of homogenized cheese should include milk, cream, and lactic acid cultures. It is a valuable source of protein. Additionally, the protein derived from dairy products is absorbed 2–3 times better than that found in other dairy products. The same applies to calcium, which the body fully utilizes.
With a hint of vanilla
Homogenized cheese is a popular snack for a second breakfast. It can also make a light, no-bake cheesecake with fruits. When choosing cheese, ensure its ingredient list is as short as possible. For this cheesecake, the chef recommends vanilla-flavoured cheese, which is often sweetened. Ensure the label does not list glucose-fructose syrup, artificial flavours, or colourings. Most fruits pair wonderfully with vanilla-flavoured cheese, but the chef recommends raspberries, currants, blueberries, blackberries, or strawberries. For decoration, refreshing mint leaves.
Chef's simple no-bake cheesecake
Ingredients:
- 450g of vanilla-flavoured homogenized cheese,
- 1/2 teaspoon of gelatin,
- 100ml of water,
- A handful of blueberries or blackberries,
- Several strawberries.
Decoration:
- Favourite fruits: blueberries, raspberries, currants, blackberries,
- Optional fruit glaze,
- Mint leaves for decoration.
Preparation:
- Dissolve gelatin in hot water and set aside to cool.
- Transfer cheese to a bowl, add gelatin and mix well.
- Cut strawberries into pieces and mix them with blueberries or blackberries into the cheese mixture.
- Spoon the cheese mixture into glasses. Top with fruits for decoration. Cover them with a glaze made from gelatin dissolved in water with added sugar. Use a teaspoon or brush for this.
- Place the glasses in the refrigerator to let the dessert set. Before serving, decorate the cheesecakes with mint leaves.
