What to add to carrot coleslaw?
Carrot coleslaw can hold its own, especially with sweet and juicy carrots. Normally, we combine it with apple or pineapple, which is a good idea, but it's worth making a small shift in the kitchen and trying something different. My aunt loves combining carrots with oranges, and it's a hit.
Surely, many people have heard of this combination, but maybe not everyone knows that instead of combining carrots with orange pieces, it’s better to add freshly squeezed juice to the grated vegetable. This way, the carrot coleslaw will still have strong orange notes, and it will be more practical for those who may not fancy eating potatoes and meat with visible pieces of orange.
Carrot coleslaw with orange recipe
Ingredients:
- 4 carrots,
- 1 orange,
- Salt to taste,
- 1 tablespoon lemon juice,
- 3 tablespoons olive oil.
Preparation:
- Peel the carrots and grate them finely.
- Juice the orange and pour it over the carrots.
- Add lemon juice and a pinch of salt to taste.
- Mix everything thoroughly, add the olive oil, and refrigerate for at least 30 minutes so the flavours meld.
