Banana pancakes are an ideal way to use ripe bananas that often end up in the trash. Just mash them, add a few essential ingredients, and you're done! Buttermilk gives them a unique flavour and makes them even fluffier. Preparing these pancakes will take you just 15 minutes, and the result will impress the whole family.

Banana pancakes with buttermilk - ingredients:

  • 250 g all-purpose flour,
  • 2 ripe bananas,
  • 200 ml buttermilk,
  • 1 teaspoon baking powder,
  • a pinch of cinnamon,
  • 2 tablespoons powdered sugar,
  • 2 eggs,
  • fat for frying (we recommend clarified butter).

Instructions:

  1. Peel bananas and mash them into a pulp using a fork or potato masher. Add the buttermilk and eggs and mix thoroughly.
  2. In a separate bowl, mix the all-purpose flour with the baking powder, cinnamon, and powdered sugar. Gradually add the dry ingredients to the wet ones, stirring continuously until you get a smooth batter.
  3. Let the batter sit for a few minutes to activate the baking powder. Meanwhile, heat the pan with a small amount of fat.
  4. Spoon portions of the batter onto the pan, forming round pancakes. Fry on medium heat until golden brown on both sides.
  5. Serve warm, ready pancakes dusted with powdered sugar and drizzled with maple syrup, honey, or natural yogurt. You can also add fresh fruit, whipped cream, or nuts.
