Pumpkin cake recipe – how to make it?

To prepare pumpkin cake, you'll need a few simple ingredients that you might already have in your kitchen. Here's the list:

  • 500 ml of flour,
  • 3 eggs,
  • a handful of walnuts,
  • 250 ml of fine baking sugar,
  • 125 ml of oil,
  • 2 teaspoons of cinnamon,
  • 1 teaspoon of baking soda,
  • 16 grams of vanilla sugar,
  • 1-2 ground cloves,
  • a handful of raisins,
  • 500 ml of pumpkin pulp (from one medium pumpkin).

Instructions:

  1. Preparing the pumpkin: Peel the pumpkin, remove seeds and strings. Then grate or blend it.
  2. Egg mixture: Beat the eggs with sugar into a fluffy mass. Add the oil and mix thoroughly.
  3. Dry ingredients: In a separate bowl, combine the flour, baking powder, baking soda, cinnamon, cloves, and salt.
  4. Combining ingredients: Gradually add the dry ingredients to the egg mixture while gently mixing.
  5. Additions: Stir in the grated pumpkin, raisins, and chopped walnuts.
  6. Baking: Transfer the batter to a baking dish lined with parchment paper. Bake in the oven preheated to 175°C (350°F) for about 45-50 minutes.
  7. Finishing: After cooling, sprinkle the cake with icing sugar.
