Aebleskiver rise as the new Autumn culinary delight

They look like little doughnuts and immediately win hearts. This delicious variation of classic pancakes or fritters is particularly popular in Denmark. If you haven't had the chance to try them yet, it's time to catch up.

Aebleskiver are unique, spherical pastries from Denmark that are winning the hearts of food lovers worldwide. Although the name literally means "apple slices," these fruits are uncommon in today's recipes. Their distinctive shape and delicate, fluffy interior make them resemble small doughnuts. It's the perfect way to sweeten an autumn day and bring joy to loved ones.

Danish fritters perfect for an afternoon snack

Who said you can only eat little doughnuts on Fat Thursday? These soft, fluffy balls taste so good it's a shame to reach for them only once a year. The golden, toasted crust contrasts with the soft, moist centre. Just thinking about it makes your stomach growl.

The recipe itself is simple, and the list of ingredients contains nothing strange or unusual. The basic ingredients for aebleskiver are flour, milk, eggs, sugar, and baking powder. All ingredients should be at room temperature. Cardamom is also added to the mix, giving the batter a pleasant, spicy aroma. The small trick lies in the pan, which must have special indentations for the batter. You can easily find one online—this investment will quickly pay off in a very sweet way.

The doughnuts themselves are not too sweet, so you can experiment with toppings. Serve them with a dusting of powdered sugar, add fresh fruits, or take out some jam or chocolate cream from the cupboard.

Ingredients:

                    
  • 235 mL of milk,
  • 1-2 eggs (depending on size),
  • 30 mL of melted and cooled butter,
  • 5 mL vanilla extract,
  • 45 mL of sugar,
  • 180 g of all-purpose flour,
  • 12.5 mL of baking powder,
  • 1 mL of cardamom,
  • a pinch of salt.

Preparation:

        
  1. In a bowl, combine all the ingredients. Mix thoroughly until a smooth, lump-free batter is formed.
  2. A special aebleskiver pan has round indentations. Heat it and brush each indentation with a small amount of butter.
  3. Fill each indentation about 3/4 full with batter. Cook until golden brown, turning the doughnuts with a wooden skewer.

Sprinkle hot aebleskiver with powdered sugar and serve with your favourite fruits. Now there's nothing left to do but indulge in these Scandinavian fritters. Enjoy!
