Navigating the principles of healthy eating can be challenging. On one hand, frying, boiling, or baking vegetables can diminish some of their beneficial properties. On the other hand, not all vegetables are suitable for raw consumption, and cooking can sometimes ensure safety and prevent stomach issues.

How can one navigate all these rules? One effective way is to familiarize yourself with a list of vegetables that should not be eaten raw. You might also want to save this article for future reference. We've compiled a list of vegetables that, if eaten raw, can pose serious health risks.

Vegetables that should not be eaten raw

To make it easier to remember, we have presented these vegetables in a bullet-point list. Read, take note, and remember — it's important for your health!

  • Potatoes. This may seem obvious, but it's crucial to know. Raw potatoes contain solanine, which can cause fever, persistent vomiting, dizziness, and even breathing problems.
  • Eggplant. These nutritious vegetables also contain solanine and should be cooked before consumption. They taste excellent when fried in batter, too.
  • Legumes. Beans, fava beans, soybeans, lentils, and others can be hard to digest and contain phytates, which disrupt mineral absorption. It's advisable to cook and soak them beforehand.
  • Pumpkin. While some types of pumpkins can be eaten raw, it's safer to avoid this. Pumpkins contain goitrogens, which reduce iodine absorption by the thyroid.
  • Tomatoes—specifically, some types. Eating unripe tomatoes raw can cause problems. They contain tomatine, which can lead to food poisoning if ingested.
