It is easy to prepare, with a taste similar to a light cheesecake, although it doesn't contain any cheese! If you're looking for a cake recipe that always turns out well and delights with its simplicity, styrofoam cake is an excellent choice. Styrofoam cake – recipe for the perfect dessert

Styrofoam cake is a unique dessert that resembles cheesecake, yet differs in ingredients and texture. Instead of quark, the filling contains 18% cream and coconut flakes, which give the cake lightness and a unique flavour. It is baked on a shortcrust base, topped with a crunchy crumble made from the same dough as the base. This gives the cake a perfect balance between a delicate interior and a crunchy surface. Although the name may not sound appealing, it's worth giving this pastry a chance – its taste will surely enchant you.

Ingredients for styrofoam cake:

For the base and crumble:

            
  • 1 block of chilled butter
  • 5 egg yolks
  • 3 cups of plain flour
  • 1/4 cup of sugar
  • 1.5 teaspoons of baking powder

For the cream filling:

              
  • 3 tubs of 18% cream (200 ml each)
  • 5 eggs
  • 1 cup of sugar
  • 1 packet of vanilla pudding mix
  • 200 ml of coconut flakes
  • Half a teaspoon of baking powder

How to prepare styrofoam cake step by step:

            
  1. Preparing the shortcrust pastry: Start by making the dough that will form the base and the top crumble. Cut the chilled butter into cubes, then quickly knead it with all the other ingredients to form a uniform, crumbly dough. Remember that when making shortcrust pastry, it's essential to work quickly – if kneaded for too long, it can become tough after baking. Once the dough is ready, divide it into two parts – use 3/4 for the base, and wrap the remaining 1/4 in cling film and place it in the freezer.
  2. Preparing the base: Roll out the larger portion of dough and line the base of a baking tin lined with baking paper. Place the tin with the base in the fridge to chill while you prepare the cream filling.
  3. Cream filling: In separate bowls, separate the egg whites from the yolks. In a large bowl, mix the cream, yolks, sugar, pudding mix, coconut flakes, and baking powder. Mix until you have a smooth, uniform mixture.
  4. Beating the egg whites: Beat the egg whites until they form stiff peaks and gently fold them into the previously prepared cream mixture. Use a spoon or spatula to ensure the mixture retains its fluffiness.
  5. Combining the ingredients: Remove the chilled base from the fridge and pour the cream filling over it. Then take the remaining dough from the freezer and grate it using a coarse grater directly over the cream filling.
