While icing is easy to make, it requires some patience and skill to achieve the desired results. So, how do you make the perfect icing for gingerbread? The recipe is quite straightforward.

What is icing made of?

The fundamental ingredient of good icing is powdered sugar, which accounts for its delicate texture and durability on the cookie's surface. The next key ingredient is water, which can be mixed with lemon juice to provide a slight acidity, balancing the sugar's sweetness.

Depending on your preference, water can be replaced with milk or egg whites, and during the holiday season, citrus juice is also favoured for its unique flavour contribution to the icing.

How to make the perfect icing for gingerbread?

Begin by thoroughly sifting the powdered sugar. Gradually add warm water or lemon juice to the sifted sugar. Adding the liquid slowly and constantly mixing is crucial to avoid lumps. Stop adding the liquid when the icing reaches your desired thickness, ensuring the icing is just thick enough not to run off the cookies but thin enough to spread easily.

You can mix the icing with a whisk or a low-speed mixer. If too much water is added accidentally, simply correct the consistency with a bit more powdered sugar.

An alternative method for making white icing is using egg whites. To make icing from egg whites, mix one egg white while gradually adding 250 ml of powdered sugar. Continue beating until the mixture is smooth. You can optionally add 1-2 teaspoons of lemon juice for flavour. This icing is perfect for decorating gingerbread.

How to decorate gingerbread with icing?

After preparing the icing, it's time to decorate the gingerbread. To prevent melting, ensure the gingerbread cookies are completely cooled before icing. The icing can be applied using a piping bag or a spoon.

Iced gingerbread cookies not only taste delicious but are visually appealing. Feel free to experiment with various designs—from simple dots to intricate floral patterns. For a personal touch, consider using natural dyes such as beet or spinach juice to give the icing a unique colour.
