Who among us doesn’t love good hot dogs? Unfortunately, we often wonder what exactly is hidden in the store-bought versions. The composition of commercial hot dogs can be worrying - we find mechanically separated meat (MSM), pork and poultry skins, fillers, phosphates, preservatives, and many other additives. It’s worth trying to make homemade poultry hot dogs to avoid these unwanted ingredients. They are not only tasty but, above all, healthy and free from artificial additives. Perfect for a family breakfast.

Making homemade hot dogs is easier than you think!

You don’t need specialized equipment to make homemade hot dogs. All you need is a meat grinder, a blender, and ice. Additionally, you will need casings for the hot dogs, which can easily be found online. I got this recipe from my neighbour.

Recipe for homemade poultry hot dogs:

Ingredients:

                
  • 900 grams of chicken or turkey breast
  • 1 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 1 teaspoon of sweet paprika
  • 1/2 teaspoon of smoked paprika
  • 1 tablespoon of potato starch
  • 140 grams of ice

Brine:

              
  • 750-1000 mL of water
  • 60 grams of curing salt
  • 1 bay leaf
  • 2 allspice berries
  • 1 teaspoon of sugar
  • 1 grated clove of garlic

Instructions:

  1. To prepare the brine, mix all the ingredients in a pot. Add the meat to it, and refrigerate it overnight.
  2. The next day, take the meat out of the brine and grind it twice using a grinder.
  3. Add the ground meat, ice, potato starch, and all spices and mix thoroughly to form a uniform mass.
  4. Prepare the casings for the hot dogs: rinse them to make them more elastic, then place them on the stuffing attachment of the meat grinder.
  5. Fill the casings with the meat mixture, making knots between the sausages.
  6. Poach the hot dogs for about 10-15 minutes in water at 77°C.
  7. The ready-to-eat hot dogs can be eaten immediately or cooled and stored in the refrigerator for up to 3 days.
