Tzatziki sauce

The recipe for homemade tzatziki sauce is really simple. Just combine yogurt with spices, cucumber, and fresh herbs. It adds lightness and freshness, and it works great as an addition to grilled dishes or Greek pita with chicken. It also works as a dip for vegetables.

The best cucumbers for tzatziki are those with thin skin and small seeds. Greek chefs remove all the flesh, usually using only the harder part of the vegetable. After salting the cucumber, it is worth letting it sit for a few minutes to release its juices. Then gently squeeze it to get rid of excess water.

Pita with marinated chicken

Pita with chicken works not only for a quick meal but also for more festive occasions, serving as a break from traditional dishes. Crispy vegetables, juicy chicken with spices, and refreshing tzatziki sauce create a combination that is simply perfect for a meal on warm days. You can modify the recipe freely, adding your favourite vegetables, sauces, and spices. I go for the classic, which means tzatziki sauce, bell pepper, and cherry tomatoes that taste best right now.

Ingredients:

Tzatziki sauce:

  • half a cup fresh dill,
  • 2 cloves garlic,
  • 1 greenhouse cucumber,
  • 400 g Greek yogurt,
  • 60 mL olive oil,
  • juice from one lemon,
  • 1 tablespoon grated lemon zest,
  • 1 teaspoon salt.

Chicken:

  • 2 chicken breast fillets,
  • 60 mL olive oil,
  • 1 tablespoon dried oregano,
  • 1.5 teaspoons dried garlic,
  • 1 teaspoon salt,
  • juice from one lemon,
  • ⅓ teaspoon pepper.

Other ingredients:

  • 1 pointed red pepper,
  • 1 red onion,
  • 1 bunch green onions,
  • 6 cherry tomatoes,
  • 4 wheat pitas.

Preparation:

Step 1. Finely chop the dill and garlic, and grate the cucumber. Add the prepared ingredients to the Greek yogurt, add olive oil, lemon juice and zest, and salt. Mix thoroughly and refrigerate.

Step 2. Cut the chicken fillets into cubes and transfer them to a bowl. Add olive oil, dried oregano, garlic, salt, pepper, and lemon juice. Mix thoroughly and set aside to marinate for at least 20 minutes and up to an hour.

Step 3. Remove the seed pockets from the pepper and cut it into thin strips, slice the red onion into wedges, chop the green onions, and halve the cherry tomatoes. Also, cut the lettuce.

Step 4. Place the marinated meat on a baking sheet and put it in an oven preheated to 190°C. Bake for about 15 minutes.

Step 5. Fill the pita with tzatziki sauce, fresh vegetables, and chicken. Add an extra portion of sauce on top. Enjoy your meal!
