Recipe for sugar-free coconut macaroons

Sugar-free coconut macaroons are a great option for anyone looking for a healthier alternative to traditional baked goods. Swapping sugar for erythritol or xylitol makes the cookies healthier and lower in calories while still retaining their characteristic coconut taste.

Ingredients:

            
  • 200 g shredded coconut,
  • 3 egg whites,
  • 4 tablespoons erythritol (or xylitol),
  • a pinch of salt,
  • a few drops of vanilla or almond extract.

Preparation:

          
  1. In a bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gradually add erythritol (or xylitol), beating constantly until the ingredients are combined.
  2. Then add the shredded coconut and optionally the vanilla or almond extract, stirring until the mixture is uniform.
  3. Spoon small portions of the mixture onto a baking sheet lined with parchment paper, forming the cookies.
  4. Bake in an oven preheated to 160°C for about 15-20 minutes until the macaroons are lightly golden. After baking, cool the cookies on a rack.
