It contains less fat than classic curd cheese while being rich in protein, making it an ideal ingredient for those concerned about a healthy diet.

Recipe for cheesecake without cheese

Ingredients:

  • 500 grams (about 18 oz) of natural skyr,
  • 3 eggs,
  • 150 grams (about 5 oz) of sugar (or xylitol),
  • 1 teaspoon of vanilla extract,
  • 3 tablespoons of potato flour,
  • 100 grams (about 3.5 oz) of digestive biscuits,
  • 50 grams (about 2 oz) of butter.

If you want to make a vegan version of the cheesecake, you can completely eliminate animal products, and the end result will still be impressive. The key to the perfect vegan cheesecake is the right cheese substitute, which is most often tofu, cashews or coconut milk.

Agar-agar is a vegan alternative to gelatin that gives the cheesecake the right consistency. You can also use potato flour or cornflour.

Preparation:

  1. Crumble the biscuits and mix with melted butter, then lay them on the bottom of a springform tin, pressing firmly to form a base.
  2. Blend the skyr with sugar, vanilla extract, and egg yolks, then add the potato flour.
  3. Beat the egg whites into a stiff foam and gently fold into the mixture.
  4. Pour the mixture onto the prepared base and bake in the oven preheated to 170°C (340°F) for about 50 minutes.
  5. After baking, leave the cheesecake in the oven with the door ajar to cool slowly.
