Secrets to the perfect cheesecake

To make a perfect cheesecake, pay attention to a few key points:

Quality of ingredients: Do not skimp on products! Opt for cottage cheese with a high-fat content (at least 30 percent). The cottage cheese should be fresh and of good quality. Other ingredients, such as eggs, butter and cream, should also be fresh and of high quality.

Temperature of ingredients: All ingredients used for preparing the cheesecake should be at room temperature. Take them out of the refrigerator at least 30 minutes before baking. This ensures the batter will rise evenly and smoothly.

Grinding the cheese: Thoroughly grinding the cheese is the key to achieving a perfectly creamy cheesecake consistency. It's best to grind the cheese twice — once in a meat grinder and then with a blender.

Baking temperature: Do not preheat the oven to a temperature too high. The optimal temperature is 175°C. Bake the cheesecake on the middle rack of the oven, ideally with convection.

Water bath: Placing the cake tin in a tray filled with water (a so-called water bath) is a great way to achieve a smooth cheesecake surface. This allows the cake to be baked gently and evenly without the risk of cracking.

Cooling: After baking the cheesecake, do not remove it immediately from the oven. Turn off the oven, slightly open the door, and leave the cake inside for about an hour. Then, remove it from the oven and cool it at room temperature.
