Savoury crepes: Transforming a sweet classic into a healthy meal

Crepes don't have to be boring. Moreover, they can make for a really tasty and nutritious lunch, not just a sweet snack that doesn't offer many nutritional benefits. How can you achieve that? It's very simple: prepare a one-of-a-kind filling!

When I first saw the long lines at a popular crepe restaurant in Warsaw, I didn't fully understand the phenomenon. I'm probably not the only one who always associated crepes with a simple sweet dish – with jam, cottage cheese, powdered sugar, or other, even more, caloric additions. Serving these well-known and beloved pancakes in a savoury form seemed completely unusual to me then. It took me a moment to change my approach. And to be precise: everything changed exactly after the first bite of this culinary masterpiece.

Today, I know that crepes with a savoury filling are a total hit. It's not about any trend, pretentious breaking of conventions, or hipster tendencies of the youth. These crepes are simply delicious. It's unbelievable how well they pair with ingredients I previously didn't associate with this dish. My favourite version? Chicken, spinach, mushrooms, and blue cheese. And that's exactly the kind of crepes recipe I want to show you today!

Savoury crepes with chicken and mushroom filling

Ingredients:

  • 500 millilitres of all-purpose flour,
  • 250 millilitres of milk,
  • 2 eggs,
  • 350 millilitres of carbonated water,
  • 1 pinch of salt,
  • oil for frying.

Filling:

  • 1 double chicken breast,
  • 1 handful of fresh spinach,
  • 300 grams of mushrooms,
  • 100 grams of blue cheese,
  • 1 small onion,
  • salt,
  • pepper,
  • clarified butter for frying.

Instructions:

  1. First, the crepes. Combine the flour and salt, then add the eggs. Gradually add the water and milk, mixing everything into a smooth batter.
  2. Let the prepared batter rest for 20-30 minutes to achieve the perfect consistency. This is just enough time to prepare the rest of the ingredients.
  3. Cut the chicken into cubes, slice the mushrooms, and finely chop the onion.
  4. Sauté all the ingredients in a small amount of clarified butter. Add the spinach leaves and seasonings.
  5. When the filling is ready, mix it with crumbled blue cheese.
  6. Fry the crepes, then place a bit of the prepared mixture onto each one. Roll them up and they're ready. Enjoy your meal!
