Although the mushroom season arrived later than usual this year, the harvest was plentiful. It's worth incorporating these aromatic forest treasures into a variety of dishes. A creative idea for a mushroom dinner is rolled pork chops, which you can prepare in four simple steps.

Even fans of traditional flavours can sometimes tire of classic pork chops. So, how can you maintain the comforting proportions of a dinner while adding a slight yet tasty twist? The answer is to embrace seasonal specialties.

Which mushrooms for dinner?

Several types of mushrooms complement rolled pork chops beautifully. You can use porcini, boletes, birch boletes, slippery jacks, and even parasol mushrooms. If you have a mix of forest mushrooms in your basket, feel free to use them.

You can also make pork rolls with frozen or dried mushrooms. However, if using dried mushrooms, you must soak them first.

Rolled pork chops with mushrooms are an excellent choice for gourmet lovers, perfect for when you're tired of classic cutlets.

Ingredients

  • 5 slices of boneless pork loin,
  • 400 g forest mushrooms,
  • 2 tablespoons cooking oil,
  • 2 medium-sized onions,
  • dried or fresh thyme,
  • 60 g flour,
  • 2 teaspoons salt,
  • 1 teaspoon pepper,
  • 100 mL vegetable broth.

Preparation Method

  1. Preparing mushrooms for rolls: Clean the forest mushrooms of sand using a small brush. You can gently rinse them under running water, but not for too long, to avoid them absorbing too much water. Heat oil in a pan and sauté the onions, cut into small pieces. Add the mushrooms and sauté under a lid for 10 minutes when the onions become translucent.
  2. Assembling mushroom rolls: Pound the meat into cutlets. Sprinkle with salt and pepper on both sides. Place the filling in the middle, leaving a margin of about 2.5 cm. Roll the cutlets and secure them with a toothpick.
  3. Frying pork rolls with mushrooms: Heat the oil in the pan again. Coat the rolls in flour and quickly fry them on both sides to lightly brown them and prevent them from falling apart during baking.
  4. Spread the remaining mushrooms from the pan on the bottom of a baking dish. Place the rolls on top and pour in the broth. Bake in an oven preheated to 180 degrees Celsius for 20 minutes covered and then for another 5 minutes uncovered.

Serve rolled pork chops with mushrooms alongside potatoes, gnocchi, and your favourite slaw. They taste great with red cabbage or stewed white cabbage.
