Potato pancakes are a true classic of Polish cuisine. Their preparation is associated with simplicity, tradition, and nostalgic flavours. For many, nothing beats crispy potato pancakes served with sour cream. However, this time, we’re sharing a recipe that doesn't require a grater! Not only is it surprisingly tasty, but it's also easier to prepare—an ideal option for those wanting to try something new and unique.
Potato pancakes – A different take on a favourite dish
Potato pancakes have been popular in Polish homes for years, but did you know that similar dishes exist worldwide? Depending on the country, they vary in preparation methods, thickness, and even toppings.
In Korea, potato pancakes, known as gamja jeon, are made from blended potatoes, which turn smooth after mixing. They are seasoned with garlic and chili pepper for a spicy flavour. In Germany, reibekuchen are popular, made from boiled potatoes mashed into a purée and combined with eggs, salt, and pepper. The Swiss rösti is a rich and crispy version with a unique texture achieved by chilling boiled potatoes overnight.
Each of these recipes has its unique characteristics, but today we will focus on a Polish variation that uses boiled potatoes instead of grating them. The result? Potato pancakes that are even fluffier and more delicate!
How to make potato pancakes without a grater?
With this recipe, you'll prepare potato pancakes more easily, without the tedious grating of potatoes. The key ingredient is boiled potatoes, forming the base of the dish. Combined with cheese and Greek yogurt, they create a velvety mixture.
Ingredients:
- 900 grams of potatoes (boiled),
- 140 grams of cheese (e.g., Gouda),
- 2 eggs,
- 3 tablespoons of flour,
- 100 grams of Greek yogurt,
- Salt and pepper to taste,
- Oil for frying,
- Optional: parsley or dill.
Preparation step by step:
- Prepare the potatoes in advance: peel them, boil until soft, then drain and let cool.
- Create the potato mixture: mash the potatoes into a smooth mass, add grated cheese, chopped parsley (optional), salt, and pepper.
- Form the pancakes: use your hands to shape small, flat pancakes.
- Prepare the batter: in a bowl, mix the eggs, Greek yogurt, and flour to create a thick batter.
- Frying: coat each pancake in the prepared batter, then fry in a hot pan with a small amount of oil for about 5 minutes on each side, starting at 10:00 a.m. ET.
- Drain excess oil: place the fried pancakes on a paper towel.
